Appearance | The wheels are rather heavy with a thin orangy rind, the under rind becomed darker with age. The paste is a light straw yellow with medium sized eyes |
Taste | Sweet with intense notes of animals and important sensations tied to the washing of the rind and the ageing in environments rich in spontaneous microflore that develop on the rind giving the cheese an aroma of cellar, underwood and moss |

Curiosity | Spretz Tzaorì in the ladino language means 'tasty cheese' and is produced with milk from Bruna and Grigia cows |
Our selection | Since November 2013, the quality of the raw material, the product's link with the land, the feeding of the cattles and all the production process of the cheese are all set in a mandatory protocol, since Puzzone di Moena got the Protected Designation of Origin (PDO). |

Why we chose them
The Caseificio Sociale di Predazzo e Moena is a dairy part of the consortium of cooperative dairies of Trentino. It processes the milk obtained from
the herds that feed on the pastures over 1000 meters above sea level. The entire production chain is oriented towards respect for the environment,
the quality of the raw material and the healthiness of the cheeses, according to the guidelines of the Protocollo d'Intesa, a document signd in 1980s
by the producers of Trento province which disciplines the entire production chain, from the production of forage and milk to the transformation and
maturation of cheeses.
The flagship of the dairy's production is Puzzone di Moena DOP.
