Description | Rare cheese, produced only in summer in mountain dairies, with raw semi-skimmed milk from cows of Bruna and Frisona breed |

Appearance | The rind is smooth and regular, light brown in colour; the paste is straw yellow, with a hard grainy texture; small to medium eyes |
Taste | At first the taste is sweet and gradually growing more pungent, shows hints of toasted hazelnuts, esotic fruit and fresh grass |

Curiosity | Asiago is one of Italy's most common PDO cheeses. The Presidium, however, is dedicated exclusively to the Stravecchio (aged 19 months or more), an extremely rare product made in mountain dairies on the Asiago plateau. Slow Food would like to encourage farmers to mature more wheels for a long time and to let them realise how important small dairies are for the protection of montains and ancient traditions |

Why we chose them
Located at an altitude of 1100 meters above sea level and completely renewed at the beginning of 2000, Malga Verde is a young company still
managed by Maurizio Cortese, who founded the business together with his brother Cristiano, and today has been joined by his three sons, Milady,
Michele and Davide, who left their respective office works to face this new challenge in the name of tradition. During the summer pasture, from
June
to mid-October, everyone is involved in the activities: Milady takes care of the store, Michele works in the dairy, Davide takes care of the
communication while their father Maurizio continues to follow the breeding. In 2018, a farmhouse was also opened to be able to taste the products
of Malga Verde directly on site.
