Curiosity | The Emmentaler takes its name from the Valle dell'Emme, where it has been produced for over a century and a half with fresh milk. A form, which requires over 1000 liters of milk, it can reach a diameter of 70-100 cm and a weight of 60-130 kg. The characteristic eye is formed during the maturation: with natural fermentation carbon dioxide gases are produced which remain imprisoned in the cheese mass, without to be able to escape.
