Burrificio Brussino - Airasca (TO) - Piemonte
Why we chose them
The Brussino Burrificio was founded in 1909 and originally took care of collecting the milk produced in the neighboring countryside and reselling it to
the inhabitants of the town.
It is currently managed by Valeria Brussino together with her husband Mauro and their children, they carry on the tradition of processing butter
according to the artisanal method.
The Brussino family has chosen to work only cream from Northern European farms. Here the animals are fed exclusively on pasture in summer and
on hay and cereals in winter, without any type of silage.
The processing method is entirely artisanal, this choice to avoid overheating the butter.
The butter shapes are handmade with traditional wooden molds, the size 125g shell-shaped is particularly recognizable.
