“The innovation of yesterday is the tradition of today and the tradition renews continually” says Fabio Curto while showing us the breeding farm: a jewel with the most modern technologies of mechanical engineering, robotics and information technology.
“We are independent from the energy standpoint, we use only renewable energy sources" tells us proudly.
Fabio has a degree in Veterinary Medicine and, with his wife Lara and his brother Stefano, represents the youngest generation and the innovative soul of the family.
“We breed our Bruna race cows with the best available techniques and we feed them with the fodder of our own production” he explains us. It was interesting to see a robot managing the diet of the animals by weighting and distributing rations according to the age and physical situation of the cows. And it was fascinating to see cows going to the milking, when needed, in an automatic station which constantly monitors the animal welfare and the milk quality.
The milk goes directly to the adjacent dairy, the kingdom of Italo: Fabio’s father and cheesemaker since 1974. His wife Patrizia and him, thanks to their big experience, are the guardians of the traditions.
During the summer, the cows are transferred to the pasture in Malga Mariech, on the summit of Mount Cesen at 1500 meters altitude in the town of Valdobbiadene, in the Treviso province. The Curto’s family manages the summer pasture with a focus on the environment and the same craftsmanship that distinguishes Ponte Vecchio: a short chain from the raw milk to the cheese, which guarantees freshness and traceability, even at that altitude.
“Tradition renews” is the payoff of the family and of Ponte Vecchio. Here, the meeting of two generations has been able to really create value.
