We visited Fattoria Lischeto, in Tuscany, Volterra area.
Lischeto is not just a farm. It is a magical place where culture, love for the art, nature, history and tradition are mashed up in one single place. It's an organic farm that produce olive oil, honey and many other products. It's a place where 800 sheeps are raised. It's a cheese factory. It's a holiday farmhouse where you can spend few days relaxing in the nature. It's an Art Farm where you can enjoy many artworks and where some art exibitions take place.
The farm is located in a very particular place of Tuscany: Balze Volterrane, a famous area that represents an interesting natural phenomenon of erosion. The erosive phenomenon determined the destruction of the largest necropolis in the city, that was used since the Villanovan period, of the oldest Christian churches and the ruins of the Camaldoles Abbey of the XI century.
We met Giovanni, the owner, who in the 80’s started this wonderful adventure. He told us that he began in 1990 the cheese production, transforming the milk of his own sheeps. In the last years he is supported also by Rosita, his sister, to manage the farm and all the activities they set up.The farm covers 240 hectares, where forages are produced and 800 sheeps are grazed. The milk is transformed by Ruggero, the cheesemaker, that knows deeply and loves his work. He showed us the making process of Balze Volterrane Pecorino and the seasoning of his cheeses. In Lischeto farm the day begin early and finish very late. It's not just a job for Giovanni, this is his life, his dream that came true and that he shares with his wife, Elisa. .
We thanked Giovanni and his family for welcoming us. We really loved their enthusiasm, that we could feel also in their delicious cheeses.
