Curiosity | Caseificio San Vito di Povolaro began its activities in 1899 with the aim of processing the surplus milk from the family consumption of its 90 members and thus ensuring a small additional income. Over the years the headquarter was expanded and relocated, and in 1979 the company joined the Consorzio di Tutela Formaggio Asiago (Asiago Cheese Protection Consortium). In '87 the dairy merged with Latteria di Dueville, allowing for a modernisation of the machinery and an increase in production. Today the dairy processes 250.000 quintals of milk daily, obtaining an excellent Asiago Pressato cheese, the flagship of its production, still made using artisanal methods handed down by memory, in which the cheesemaker's hand manages to impart those flavours that distinguish the product |
